  9. Provide 1 3/4 cups coconut milk
  10. Take 1/2 tsp salt
  11. Get Garnish
  12. Provide Handful spinach
  13. Take 2 chopped carrots

  1. Add oil in a sufuria, once hot add in the onions, garlic and ginger, cook till fragrant, for about 5min.
  2. Add in the carrots and vegetable stock and bring to a boil, around 4min
  3. Reduce heat to simmer and cook the carrots till soft, around 25min
  4. After 25 min, proceed to add the coconut milk and let this simmer for 5 min.
  5. Finally remove from heat and proceed to blend the soup, do so in batches.
  6. Serve while hot with a slice of buttered bread, so delicious, enjoy 😊
