The ingredients needed to make Chicken Rice & Feta Soup:
- Prepare 1 small onion, minced
- Use 2 stalks celery, minced
- Prepare 1 clove garlic, minced
- Get 2 tbsp olive oil
- Prepare 1/3 cup jasmine rice (uncooked)
- Provide 5 cup chicken broth
- Get 1/4 tsp basil
- Take 1/4 tsp oregano
- Use ground black pepper
- Prepare 1/2 lemon (just the juice)
- You need 1 1/2 cup cooked chicken (see Note)
- Prepare 1/3 cup feta cheese, slightly crumbled
Steps to make Chicken Rice & Feta Soup:
- In a large pot over medium heat, sauté the onion and celery in olive oil for 2 minutes. Add the rice and continue cooking until the rice has browned slightly. Stir in the garlic and cook an additional minute.

- Stir in the chicken pieces and continue cooking just until the chicken is warmed through, about 5 minutes.
- Remove from heat and stir in the lemon juice and feta cheese. Serve immediately.
- NOTE: For this recipe, I use a rotisserie chicken from the deli. After removing the meat, I make a rich chicken broth from the carcass. I use about half the meat from the rotisserie chicken in this recipe, chopped into large pieces.
